Przemyslaw Klima, pioneering head chef and co-owner of Bottiglieria 1881, ensured Poland’s admission to the ranks of Michelin-starred restaurants when his restaurant was the first in the country to be awarded two stars. His culinary career began in Kraków and, following pivotal positions, took him to the groundbreaking Polish restaurants Senses and Atelier Amaro, which brought Poland its first stars. He developed his expertise through work placements in Europe’s most prestigious kitchens, including Noma and Kadeau in Copenhagen. In 2019, Klima became head chef and co-owner at Bottiglieria 1881, receiving his first Michelin star just a year later. Klima’s philosophy interweaves the luxury of Polish terroir with warm homeliness, creating menus that vary local products and wild delicacies depending on the season while awakening the warm nostalgia of family celebrations. Klima’s first book "Fun Dining", which will be published in 2024, also features dishes that offer both homeliness and culinary excellence.
