Kristian Baumann’s culinary world: Copenhagen, Korea, Koan. In 2002, Baumann started an apprenticeship at Bregnerød Kro straight after leaving boarding school and quickly rose through the ranks as a chef in renowned kitchens. Up until 2005, he supplemented his training by doing work placements at Restaurant Noma. By 2008, not only had Baumann honed his skills in France at the Auberge de Tourettes, he had also contributed to Noma’s famous heritage. His ascent continued when he became sous-chef at Restaurant Relæ in 2009, where he played a key role in opening Manfreds and continued to develop his culinary skills. From 2012 to 2014, Baumann worked as a chef at Restaurant 1.th, and then rose to become sous-chef at Noma, where he remained until 2016. His big moment came with the founding of Restaurant 108, where he was a chef and co-owner up until 2020. Today, as Chef Patron, Baumann brings together all his rich and varied experience to the Koan and Juju restaurants, where he presents a blend of Korean-inspired dishes grown on Nordic terroir, nurturing a course that celebrates culinary innovation as well as deep reflection, inviting guests to a world full of imaginative indulgence and cultural reverence.
