Famed for precision, creativity and unexpected combinations, Jan Hartwig began his impressive culinary career in the year 2000. His journey took him to Berlin, Wernberg-Köblitz and Saarbrücken before he moved to the three Michelin-starred restaurant Aqua in Wolfsburg in 2007, where he worked as a sous-chef under Sven Elverfeld. In May 2014, he was appointed Head Chef of restaurant Atelier at Hotel Bayerischer Hof in Munich, where he earned two Michelin stars in 2015, followed by a third in 2017. He achieved this faster than any other German chef and was the first chef in Munich to do so since Eckart Witzigmann. Named "Chef of the Year" several times, Hartwig pursues a philosophy of continuous improvement: «be better today than you were yesterday." His own restaurant JAN opened in Munich in October 2022 and combines German culinary tradition with a modern touch. After less than six months, it was awarded three Michelin stars and, in 2023, was named “Best New Restaurant in Europe” by OAD. In his cookbook, "JAN: Labor der Liebe (Labatory of love)", he shares his passion, giving readers in-depth insights in the creative process of developing his dishes.
