A special comeback at THE EPICURE! Guido Braeken cooked at THE EPICURE six years ago, but back then he was not yet a head chef. Since embarking on his culinary career in 2004, Guido Braeken has honed his skills in the kitchens of top restaurants including De’n Dillegaard, de Leuf and La Source, which finally culminated in his role at Beluga Loves You. In April 2021, he took over the management of Julemont, guiding the restaurant to two Michelin stars within a year. Guido’s cooking philosophy focuses on balance and excellence, using only the best products to create dishes that harmonise with Julemont’s luxurious castle surroundings. His approach combines classic French techniques with a modern dining experience, reflecting a blend of historic splendour and contemporary elegance. The tranquillity of Château Wittem’s lush gardens and the restaurant’s homage to its medieval roots offer guests not only a meal, but a refuge in a world of elegant relaxation, where every nuance of flavour takes you a step away from the hustle and bustle of life and into the realms of sophisticated style.
