Successfully running the kitchen of a top establishment is challenging enough for most. Peter Gilmore manages this feat twice over: under his management, both the Quay (since 2001) and the Bennelong (since 2015) are among Sydney’s best and most awarded restaurants. Gilmore employs a similar philosophy at the two establishments – both conveniently located right at the harbour – of dishes inspired by nature, with ingredients sourced from various small local businesses that often produce exclusively for his restaurants. Despite the double role, the 54-year-old always finds time to pass on his knowledge. Gilmore has penned three cookbooks, conducts seminars and makes regular appearances at festivals and televised cooking shows (both as a participant and as a judge). In addition, Peter Gilmore has been in the world rankings of the best chefs for many years.
