Tim Boury represents a new generation of Belgian haute cuisine – precise, clear, and full of character. His signature is deeply rooted in the classical French school, shaped by his time at Comme chez Soi in Brussels and as the right-hand man of Sergio Herman at the legendary Oud Sluis. Today, he runs Restaurant Boury in Roeselare – awarded 3 Michelin stars and 19 GaultMillau points – together with his wife Inge.
The restaurant’s philosophy is one of elegant clarity, consistent product cuisine, and hospitality. Inge Boury, also a trained top chef, is a passionate host. His brother Ben takes the vision a step further with Boury Academy and Boury Bottled. Today, the restaurant is located in a restored villa with guest rooms, a garden, and a bar.
