Mitja Birlo is a leading figure in the modern gastronomic scene. At Restaurant 7132 Silver in Vals, he was awarded two Michelin stars and 18 GaultMillau points and was named GaultMillau “Chef of the Year 2022”. After this impressive career high, he planned to take a creative break to travel and refocus his energies. But the unique offering at The Counter, a fine-dining restaurant at Zurich’s main railway station with a spectacular and innovative restaurant concept, tempted him back into the kitchen. Birlo’s passion for fresh, regional and seasonal ingredients shines through in his imaginative presentation. What sets him apart is his talent for perfectly balancing traditional techniques and modern influences.
