Originally from Italy, Massimiliano Delle Vedove honed his culinary skills in some of the world’s most prestigious kitchens and now stands alongside star chef Dani García, playing a key role in shaping his international gastronomic universe. As Executive Chef of Smoked Room in Madrid – an intimate space with just 14 seats – he is responsible for a cuisine that was awarded 2 Michelin stars only six months after opening in 2021. His cooking is defined by fire, smoke, and precision – an avant-garde interplay of open flame, uncompromising product quality, and seasonal creativity, refined with Japanese techniques such as kombujime or chawanmushi. At its core lies the product itself, enhanced by no more than three carefully selected ingredients – deliberately minimal, yet of great culinary impact. Massimiliano Delle Vedove combines meticulous craftsmanship with emotional depth, innovation with a reverence for tradition – all underpinned by remarkable humility and a strong sense of teamwork, which characterise both his leadership and his cuisine.
