Lewis Wilson is a master of classic French patisserie and Head Pastry Chef at London’s legendary The Ritz. In the restaurant, which holds 2 Michelin stars, he leads a team of 18 pâtissiers and is responsible for its famous afternoon teas, as well as the à la carte service – preparing up to 400 servings daily.
His résumé is replete with well-known addresses: after stints at Auberge de l’Île in Lyon and Mirabelle in London, he returned to The Ritz in 2007 and rose to Head Pastry Chef in 2013. Today, he unites the highest level of craftsmanship with innovative techniques and classical elegance.
