Kai Ho, who hails from Taichung, mastered traditional Taiwanese and Chinese cuisine in the early years of his professional career. Later, he expanded his culinary style at the Michelin-starred Restaurant Guy Savoy and at JAAN in Singapore, among stints at other establishments. In 2016, he opened the restaurant Taïrroir in Taipei, whose name is a combination of "Taiwan" and the French "terroir".
At Taïrroir, Ho combines Taiwanese ingredients with international techniques, reinterpreting classic dishes with a focus on clear flavours and careful presentation. His approach is characterised by precision and a deep understanding of products and methods of preparation.
Taïrroir was awarded its first Michelin star in 2018, with a second following in 2019. In 2023, the restaurant became the first Taiwanese restaurant to be awarded 3 Michelin stars.
