Jorge Vallejo

After completing his studies in Management & Culinary Arts, Joge Vallejo worked as a chef on cruise ships before turning his attention to haute cuisine. Vallejo learnt from the best at some of the world’s most famous restaurants, such as Noma, Pujol and Diana, before deciding to open Quintonil in Mexico City in 2012. In 2020, alongside his wife, Flores (who studied Hospitality Management at Les Roches), Vallejo decided to redesign the restaurant and expand the range of dishes on offer. This involved adding exciting, insect-based menus, among other developments. Michelin stars and GaultMillau points are not awarded in Mexico, but the quality of Vallejo’s dishes is no secret: in 2022, Quintonil was ranked ninth in the World’s Top 50 Restaurants.
