Jonnie Boer has been serving up the highest-calibre cuisine in De Librije in Zwolle, the Netherlands, for an impressive 31 years. In 1992, the very year Boer took over the restaurant, he and his wife, Thérèse, were awarded their first Michelin Star and since 2004, the restaurant has carried three stars. Librije’s Hotel, Boer’s second business, opened in Zwolle in 2008 in a former women’s prison and boasts a two-star restaurant. The entrepreneurial couple grew up in the area: they have known and loved the region’s produce since their childhood. This knowledge (as well as good contacts) is the basis upon which the couple can deliver on their promise to transform the everyday human activity of eating and drinking into a special experience on every single occasion.
