David Žefran is part of the young generation of top Slovenian chefs. As chef and co-owner of Milka in Kranjska Gora, he combines his experience at establishments such as Frantzén and Atelje with a distinctive culinary signature.
His cuisine is shaped by the alpine environment and focuses on a clear, minimalist style. Regional products such as wild herbs, wild mushrooms and freshwater fish and wild plants from the Alps are at the heart of his dishes. With precise techniques and exquisite coordination, Žefran brings the nature of Slovenia to the plate – in modern, seasonally inspired interpretations.
Milka has received numerous awards in a short period of time, including two Michelin stars and 17.5 GaultMillau points.
