Born in 1986 in Roanne, César Troisgros represents the fourth generation of the renowned Troisgros family – one of the most influential names in the history of French gastronomy.
After training at the Institut Paul Bocuse, he gained experience with top chefs such as Michel Rostang, the Roca brothers and Thomas Keller. In 2011, he returned to the family business and took over sole responsibility for the restaurant Le Bois sans feuilles in Ouches near Roanne, which holds 3 Michelin stars, in 2023.
The tradition of holding 3 Michelin stars, established at the previous location in Roanne, has now continued uninterrupted for an impressive 57 years. César Troisgros stands for a modern, globally inspired French cuisine shaped by international influences, regional produce and sustainability. He is committed to biodiversity and the preservation of traditional vegetable varieties and has received multiple awards for his work.
